When businesses build an AI assistant, one of the first questions is which large language model to use. Anthropic's Claude and OpenAI's GPT models are the two most common choices, and both are excellent. Finding the best LLM for a business chatbot is less about which model wins online benchmarks and more about which one performs best on your tasks, with your data, at a cost that works.
As builders who deploy both, here is the framework we use with clients.
Model providers release new versions several times a year, and rankings shift with each release. Both providers also offer a range of models, from large, highly capable models for complex reasoning to smaller, faster and cheaper models for simple, high-volume tasks. The right choice often differs by task within the same business.
Generic benchmarks measure general ability. What matters is how well a model answers your customers' real questions using your knowledge base. Always test with your own data.
Can the model stick to your brand voice, avoid off-limits topics, follow formatting rules and escalate when it should? Models differ in how naturally they write and how reliably they follow detailed system prompts.
Modern assistants do more than talk. They look up orders, book appointments and update CRM records through tool or function calling. Test how reliably each model chooses the right tool and fills in the right parameters.
The context window is how much text a model can consider at once. Larger windows help with long documents and long conversations, though a good retrieval system matters more than raw size for most chatbots.
For live chat and voice, response latency directly affects experience. Smaller models are usually much faster.
API pricing is based on tokens: input tokens (what you send, including the knowledge passages) and output tokens (what the model writes). Estimate cost per conversation, not cost per token, since long prompts can matter more than long answers.
Review each provider's commercial terms on data retention and training, regional availability, and whether they offer agreements such as a BAA for healthcare use cases. Both Anthropic and OpenAI publish business terms that limit how API data is used; read the current versions for your use case.

Collect 50 to 100 real questions from emails, chats and call notes, including edge cases.
Use the same system prompt and knowledge base for every model.
Score each answer on accuracy, helpfulness, tone and whether it escalated correctly.
Test tool calls such as booking an appointment end to end.
Measure latency and token usage to estimate monthly cost.
Repeat after major model releases, since the results can change.
Many production systems route tasks to different models:
A small, fast model classifies intent and handles simple FAQs.
A larger model handles complex questions, long documents or sensitive conversations.
A separate step checks answers against the knowledge base before sending.
Automation platforms such as n8n make this kind of routing straightforward.
Build your assistant so the model can be swapped. Keep prompts, knowledge content and business logic separate from the provider-specific code. This lets you adopt a better or cheaper model later without rebuilding.
Is Claude better than GPT for customer service? It depends on your content and requirements. Both perform strongly; the only reliable answer comes from testing on your own conversations.
Which model is cheapest? Smaller models from both providers are far cheaper than their flagship models. Total cost depends on prompt length, conversation length and volume.
Can I switch models later? Yes, if the assistant is designed with a provider-agnostic layer. Re-test before switching.
Do providers train on my business data? Check each provider's current commercial and API terms. Business API terms generally restrict training on customer data, but policies vary by product and change over time.
